1 cup fresh or frozen blueberries
1/4 cup water
2 tablespoons sugar
1 teaspoon lemon peel (~1 small lemon)
3/4 teaspoon cornstarch
- Thaw blueberries, if frozen, and do not drain.
- Combine all ingredients in a small saucepan. Cook over medium heat, stirring frequently, until thick and bubbly; continue to cook for another two minutes. Remove from heat and serve.
Yield: about 1 cup
