Chipotle Lime Chicken

Chipotle Lime Chicken with Warm Black Bean and Corn Salad from Optimal Nutrition and Health
This entree is a great way to enjoy Mexican and southwest-style food while keeping the calories low and the flavor high.  Pair it with my Warm Black Bean and Corn Salad (seen pictured) for an easy weeknight meal.  Take it to work the next day for lunch by tossing it with some salad greens and sliced avocado.




Ingredients:
1 teaspoon Mrs. Dash Southwest Chipotle Seasoning Blend
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 tablespoon canola oil
6 (4 ounce) skinless, boneless chicken breast cutlets
2 tablespoons fresh lime juice

Preparation:
  1. Mix together seasonings (Mrs. Dash through garlic powder).  Sprinkle evenly on both sides of chicken breast cutlets.
  2. Heat canola oil in a large skillet over medium heat.  Add seasoned chicken breast cutlets and cook for about 5 to 7 minutes or until golden brown.  Turn cutlets over and continue to cook until chicken is thoroughly cooked.
  3. Reduce heat to medium-low and add lime juice.  Turn chicken over to coat with lime juice. 

Yield:  6 seasoned chicken breast cutlets

 Serving Size:  1 seasoned chicken breast cutlet
