This quick and easy one-dish meal is a great way to use your leftover Creamy Macaroni and Cheese. It also tastes good with leftover cooked chicken or turkey if you prefer it over ham or have it on hand.
3 1/2 cups Creamy Macaroni and Cheese
1 cup diced cooked ham (or chicken or turkey)
12 oz bag frozen broccoli florets (such as Steamfresh)
1/4 cup fresh whole grain bread crumbs (optional, also tastes good without)
1/4 cup (1 oz.) shredded sharp cheddar cheese
Preheat oven to 350 degrees F. Lightly grease 4-quart casserole dish. Microwave frozen broccoli on High for 2 minutes, then combine with Creamy Macaroni and Cheese and cooked ham in casserole dish. Sprinkle with breadcrumbs and shredded cheese. Place in preheated oven uncovered and bake for 20 minutes or until heated throughout and cheese is melted.
Servings: 4 (about 1 1/2 cups per serving)
322 calories, 35 grams carbohydrate (6 grams fiber), 24 grams protein, 17 grams fat (9 grams saturated). This dish is an excellent source of vitamin A, riboflavin (a B vitamin), calcium, vitamin C. It is a good source of potassium, several B vitamins (thiamin, niacin, B6, B12), iron, and zinc.
