Trail mix is commonly seen as a good-for-you snack, but it can really be loaded with calories and sugar. Try this fall inspired mix that keeps the calories and sugar down while packing a punch with protein and fiber. Soy nuts are a great occasional addition as they are higher in protein and fiber than nuts and seeds. Feel free to try other combinations. I love dried cherries with almonds and a few dark chocolate chips.
2 tbsp. (~1/2 oz) roasted pumpkin seeds
1 tbsp. (~1/4 oz) roasted soy nuts
3 tbsp. (~1/4 oz) baked apple chips (such as Buddy Fruits 100% Apple Chips)
1 tbsp. (~3/8 oz) sweetened dried cranberries
Put all ingredients into a zip-top bag and shake to combine.
Servings: 1 (about 1/2 cup)
181 calories, 26 grams carbohydrate (7 grams fiber), 8.5 grams protein, 6 grams fat (1 gram saturated), 0 mg cholesterol, 412 mg sodium. This snack is high in fiber. It is a good source of magnesium and zinc.
