I enjoy incorporating lemon into all sorts of dishes, from entrees to dessert. I also love finding ways to incorporate fruit into my desserts to limit added sugars and to make the dessert a little healthier for you. In this recipe, the only added sugar comes from the marshmallow creme. It tastes great when paired with berries, which are naturally lower in sugar, apples, or really any other fruit you may have on hand.
1/2 cup plain, fat-free Greek Yogurt
1/2 cup marshmallow creme
4 ounces 1/3-less-fat cream cheese
1 tablespoon fresh lemon juice
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
Combine all ingredients in a medium mixing bowl and blend using a handheld electric mixer until smooth.
Yield: about 1 cup
Serving Size: about 1/4 cup
