This is a great side dish for anyone who is trying to limit carbohydrate intake. Although you'll know that these are not mashed potatoes, they have great flavor and texture and are a tasty replacement. My daughter, a mashed potato lover, also loved these. While they have a bit more fat than you might expect, it's important to remember that if you pair it with a lean protein (like fish or chicken) and veggies, this will even-out. 1 pound (16 oz.) frozen cauliflower florets
2 tbsp. water
2 oz (~1/3 cup) 1/3-less-fat cream cheese
2 tbsp. unsalted butter
1 tbsp. olive oil
1 tbsp. fresh or freeze-dried chives
1/2 tsp. garlic powder (or to taste)
1/4 tsp. salt (or to taste)
1/4 tsp. black pepper (or to taste)
Place cauliflower florets and water in a microwave-safe bowl. Microwave on HIGH for about 6 minutes or until florets are very tender. Place cauliflower in a food processor. Add the remaining ingredients (cream cheese through pepper) and process until cauliflower is pureed and all ingredients are combined.
Servings: 4 (1/2 cup per serving)
Nutrition Info: 141 calories, 7 grams carbohydrate (3 grams fiber), 4 grams protein, 12 grams fat (6 grams saturated). This side dish is an excellent source of vitamin C.
