This is a super-easy recipe that both kids and adults will love and a healthier alternative to breaded chicken nuggets! Prepared as is, it complements a variety of different foods, but feel free to get creative and change up the seasonings. My family enjoys it as a healthy protein source along with the Garlicky Tomato Pasta. These bites also reheat well for a fast lunch to top a garden salad.
Non-stick cooking spray
1 pound skinless, boneless chicken breast, cut into chunks
1 whole large egg, lightly beaten
1/2 cup (2 ounces) finely grated Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon olive oil
Yield: 4 servings
