This sauce tastes great in a variety of applications. Enjoy it as a lower sugar syrup on pancakes or waffles, such as my Whole Grain Waffles. Per 1/4 cup, it has half the amount of calories and carbohydrates than you'll find in lite pancake syrup, not to mention regular syrup. Also try this sauce added to plain yogurt to limit your intake of added sugar rather than buying fruit-flavored yogurt.
1 cup fresh or frozen blueberries
1/4 cup water
2 tablespoons sugar
1 teaspoon lemon peel (~1 small lemon)
3/4 teaspoon cornstarch
Yield: about 1 cup
