Similarly to my Simple Blueberry Sauce, this refreshing strawberry-based sauce is versatile and can be used in a variety of applications. Most of the sugar in the recipe is natural (from strawberries). In fact, depending on how sweet your strawberries are, you might find that you need less. As it stands, there is about 2 teaspoons added sugar per serving, still less than you would find in similar sauces. This is used in my Strawberry Basil Swirl Muffins and would also taste good as a topping for pancakes or waffles, and mixed into plain yogurt.
1/4 cup packed brown sugar (or to taste)1 1/2 teaspoons cornstarch
4 cups (about 1 pound) strawberries, hulled and pureed
1/4 cup lightly packed basil leaves
2 teaspoons strawberry balsamic vinegar (regular balsamic also works well)
Yield: about 1 1/2 cups
Serving Size: about 1/4 cup
